If you still enjoy making your own charcuterie display, Managing Partner Matt Waldron at Shore Cafe has a few tips for you.
Follow the Rule of 3:
Combine equal parts meats, cheeses, and savory sides, such as cornichons, pickled peppers, or kalamata olives.
Add Some Sweetness:
On larger custom boards, Shore Cafe adds honey, and Matt says regular boards include blueberries, strawberries and dried apricots.
Accent with Herbs:
"A little greenery goes a long way," Matt says, recommending sprigs of thyme, rosemary or sage to garnish your board and tie everything together.
Separate Colors:
Avoid a mass of meat or cheese on one part of the board, alternating the different colors and creating separation so guests can tell what's what. On Shore Cafe boards, for example, the "rose" shape formed from salami anchors one side of the board, while a flower shape made of pepperoni brightens the other side. "You wouldn't want them side by side," Matt says.
Use Crackers as Palate Cleansers:
"Don't make your cracker selection the star of the show," Matt says. Shore Cafe uses a peppered water cracker and generally sticks to no more than two types of crackers. They should be a neutral flavor so the quality meats and cheeses shine.
